Champagne wines
The vineyard of Champagne is the vineyard located further north in France, and it has counties of Haute-Marne, Aisne, Aube and some municipalities of Seine-et-Marne.
The nameChampagne has always been tied to those sparkling wines, with a very distinctive production process that relies on steps such as pressurization, fermentation, assembly, foaming, the turning over of the bottles, and dosification.
The area of Champagne consists of calcareous and loamy soils, which force vines to bury their roots at least twenty metres deep. Traditional strains of this region are Pinot Noir, Chardonnay and Pinot Meunier. Among the dry wines there are vintage champagne, the white wines, the rosé wines, the Grand Cru 100% and the Crémants.
