Is it better to serve wine at night?

Serve wine at the best conditions can now depend on new factors. Such as light and sound, according to Oxford scientists. In the coming months the University of Oxford and Campo Viejo winery will test the impact of light and sound on the taste of wine.

For this experiment, at the Southbank Festival in London, thousands of people will be invited to enter the lab colors of Professor Charles Spence of Experimental Psychology, University of Oxford. In this lab, they will be invited to drink in different glasses, some completely black, others exposed to light and sound. Campo Viejo Color Lab opens the Southbank in London on May 2 and runs through May 5.

Spence believes that the findings could influence the labeling of wines in the future. “Drink while listening to classical music” or “better served in the evening”

Spence, for The Telegraph:

“We ‘ve all been in this situation where you bring a bottle of wine back from vacation . You are eager to open it with friends. Yet it does not have quite the same taste as you remembered.”

“Of course, wine is always the same. The only thing that has changed is the environment. So if you want to enjoy your holiday wine, you must recreate as much as possible the initial environment. You may will have to wait for a sunny afternoon or a warm summer night. Change the music that recreates the atmosphere. Everything will help you get the flavor you remember.»

In a previous study from the University of Oxford, where experienced tasters tasted champagne in black glasses, they struggled to make the difference between sparkling wine and a cheap bottle of expensive champagne.

The results of this new study, commissioned by Campo Viejo, will be published by Professor Spence. But he can already say that the findings could lead to the end of the traditional sommelier: “I think the results of our study extend to restaurants and bars. They will reconsider the color of tablecloths, glassware, cutlery and even the color of the pictures on the walls. “

Today, we recommend two Campo Viejo to be tastes in the dark 😉

The Black Russian

The Black Russian is a cocktail that comes from Brussels, Belgium. It is named so because of its black colour, and because of the fact that its main ingredient is the Russian vodka. Others suggest that the word Black was added during the period of the Cold War. It was created in 1948 by Gustave Tops, who was the head of the bar Metropol in Brussels.

Tops created the first Black Russian to delight the U.S. Ambassador to Luxembourg Perle Mestre. Since then, this cocktail has continued to be developed, and is considered to be one of the sexiest cocktails with vodka, according to men and women. This may be because of the absence of fruit and the strength and character that gives the coffee liquor.

To prepare the Black Russian, there are many variations. This is done especially with coffee liqueur, vodka and cola. Although the proportions vary depending on the tastes, the recommendation is 4 cl of Vodka 2 cl of coffee liquor. Add cola according to your taste.

It is not necessary to mix this cocktail before serving . Place ingredients in pre- filled with ice glass. Mix with a shaker.

Initially, this drink was served in a cocktail glass. But with the passage of time, we began to serve in simple glasses. Many drink it as a digestive.

Today we recommend two great vodkas for an awesome Black Russian:

Women know how to drink

Middle-aged women know better how to control themselves than men when they drink alcohol. This is the conclusion of a recent study, led by Glasgow Caledonian University. The information was published in the Scotsman. It shows that women are more likely to stop drinking when they reach a certain level of intoxication. They remain “in their safe zone” more easily than men.

The study, which is published in the journal Sociology of health and illness, is entitled “Staying ?in the zone? but not passing the ?point of no return?: embodiment, gender and drinking in mid-life” It analyzes the behavior of men and women in the middle-aged in their drinking habits. Through interviews with people of both sexes in the age group of 30-50 years old.

According to Dr. Carol Emslie, co- author of the research,

“Men often say they know when to stop, but are unable or unwilling to explain why; However, women say they know when to stop drinking when they think on their responsibilities and their roles of working women and mothers. Another important factor is the ?what people will say?. A drunk woman is still has a worst impact than a drunk man.”

So rather than focusing on the calculation of units of alcohol, the subjects of the study were taken to share their physical and psychological changes. It is a novelty that the health authorities of the countries in the world could exploit for their prevention campaigns. This would allow them to more effectively reach individuals and alter the risk of abuse of alcoholic beverages.

Are you a working woman? Congratulations! We recommend:

Lamb stew with wine

The dishes taste better with wine. Today, after the most delicious recipes that include wine, I recommend this recipe for lamb stew with wine. I assure you that you will enjoy it!

  • 1 leg of lamb
  • 1 glass of red wine, a good Carignan or Calatayud red will be perfect.
  • 1 yogurt
  • A pinch of curry
  • 1 onion
  • Water, oil, salt and pepper
  • Flour
  • Mint

This delicious dish is easy to prepare. What is sought is the diversity of flavors, with a spicy touch of curry and oriental flavors. The recipe is for about four people.

For starters, take the lamb pieces previously cut from the butcher. It is better if they are cut so you do not have to do it, you will go much faster. Enter the lamb in a pan with oil, add salt.

Warm a frying pan with oil, chopped onion and mix properly. Insert the lamb pieces, pour the red wine, a pinch of curry powder and cover with water. Let stand for about 15 minutes until the meat is tenderer.

To accompany the meat, we have several options: fry the vegetables separately and then add them to the pan to combine. Another option is to do some apples next to the meat. Put them in a saucepan to brown. We can add some yogurt to mix with apples and meat. This touch is used to create more oriental flavours. At the time to decorate the dish, add a little pepper, parsley or some type of mint leaves, usually important in oriental cuisine.

And what do we have to accompany this dish? Today we recommend you:

The Irish Coffee

Irish coffee is a cocktail created in 1940 thanks to a delayed flight of Pan American. Its creator Joe Sheridan wanted to add Irish whiskey to his coffee, because of the cold suffered by passengers. He then presented it as an Irish coffee.

  • Irish whiskey 30ml, as Jameson or Bushmills Original.
  • 1 cup of coffee
  • Cream
  • Brown sugar
  • Ground Cinnamon
  • Ground coffee for garnish

Step 1:

If you have a coffee machine, heat the cup with the vaporizer. Otherwise you can use hot water, leaving the cup enough for it to take the ideal temperature.

Step 2:

Now mix the whiskey and sugar, pour into a saucepan and heat gently. You must be careful that the sugar is dissolved in whiskey. When this is the case, pour the mixture into the preheated cup.

Step 3:

Place your coffee carefully on top of the whiskey and sugar. Pour slowly over the back of a spoon, or drag on the walls of the cup.

Step 4:

Beat the cream before putting it in the cup to make it fluffy. The goal is not to mix the ingredients. Use the same technique as for coffee. Use the back of a spoon to introduce the cream gently into the cup.

To decorate the Irish coffee, you can sprinkle a little cinnamon on the wet edge of the glass. You can also add ground coffee at your convenience. It depends on personal taste.

Rabbit with Chocolate

TAGS:Rabbit with Chocolate is one of those delicious recipes that can be prepared with wine, in this case red. It is a perfect recipe for overweight people because it is made from wholesome ingredients.

Originally from Ribargoza, it is like other recipes of Catalan cuisine. Rabbit with Chocolate is a delicious meal for four, perfect for families and a happy weekend. This dish goes well with a red wine from Priorat, for example:

  • 1 rabbit
  • 2 sweet potatoes
  • 1 onion
  • 2 carrots
  • 6 cloves of garlic
  • 40 grams of grated dark chocolate
  • 1 glass of red wine with good acidity, as Luis Cañas Reserva 2010.
  • Extra virgin olive oil
  • 1 tablespoon of corn flour refined
  • 1 sprig of thyme
  • 1 bay leaf
  • 1 sprig of rosemary
  • Salt
  • Pepper
  • Parsley

Step 1:
Clean the potatoes and place in a baking tray, then add a little olive oil and put in the oven at 180 degrees Celsius for 40 minutes.

Step 2:
Take the potatoes from the oven and let cool. Peel the skin off and then put them in the blender. Finally, add a pinch of salt and reserve your puree.

Step 3:
Cut the rabbit and season to taste, brown over medium heat in a pan with a little olive oil 4 cloves garlic, peeled.

Step 4:
When the chopped rabbit begins to take a gold color, pour a glass of red wine. Cover completely with water and cover and simmer for 35 minutes.

Step 5:
Remove the rabbit from heat and separate the broth rabbit, both must be booked separately.

Step 6:
Then you need to chop the onion, carrot and 2 cloves of garlic to sauté in a pan with a little olive oil.

Step 7:
Add to pan the thyme, rosemary and bay leaf and pour broth rabbit previously booked and cook for 10 minutes uncovered, until you have a strong flavor.

Step 8:
Stop sauce. Remove herbs (pass through a sieve). Mix with a little flour diluted in water to give more character.

Step 9:
Add rabbit and chocolate in a pan with the sauce, stirring constantly to dissolve the chocolate while avoiding the burn. Simmer for 5 minutes.

To serve your rabbit, pour chocolate on each plate and serve with mashed potatoes garnished with a little parsley.

To accompany this dish, we recommend a mineral wine, to refresh your palate between bites, or a powerful and fleshy wine that is unfazed by the power of chocolate. Here are our recommendations:
