Physics, mathematics, all those hours at school without finding the meaning of any of them and suddenly, while reaching adulthood and landing in the wine world, you realize that those subjects are very necessary for … getting the right temperature for wine and choosing the most delicate wine vintage. Accuracy is essential (and a good wine cellar, like those in which you can select different temperatures depending on the levels, to store reds and whites, each in its exact temperature).
Those who already have all the hardware at home and just need a mini guide to enjoy its use will be glad when reading the following lines:
Between 17 and 18 º C is the temperature at which the more powerful red wines should be served. We are talking about these spicy, warm, intense red wines such as Cabernet Sauvignon, Rhone, Ribera del Duero, Toro, Shiraz, Priorat or Bordeaux red wines. Tasting them colder than that will just difficult the tasting as they need to open so we can perceive their aroma, their evolution in the mouth and so on. So, please pay attention to the Celsius, especially when the wine is good.
Between 11 and 16 º C: when we talk about red wines with less body and more prominent in their fruit character such as Zinfandel, Pinot Noir, Rioja, Chianti, Penedes, Jumilla, Yecla, Mallorca or Madeira we will serve them a little cooler. The same rule applies to young red wine. And, we will not need to vary the temperature to serve bodied white wines or those that have been aging (as the amazing Viña Tondonia Crianza white wine). If someone still has not tasted it, do not leave it for later, because it is worth as much as many good red wines. That’s what I will say.
Between 6 and 10 º C: lighter white wines, such as Chardonnay, Chablis, the Semillon Australian or Sauvignon Blanc, around 10 º . The lower temperatures will be chosen to preserve the flavour of sweet wines and sparkling wines like Sauternes, Muscat, Champagne, Cava or Asti. Although I like to have the first at 8 º C, I recognize that these two degrees more do much when it comes to the tasting.
So, get a good wine thermometer and start a new stage in your life, enjoying twice as much the best wines.
