Cod a la Llauna

Cod is a white low fat fish rich in protein and minerals such as phosphorus, potassium, sodium, calcium and magnesium, in addition to its content in Omega 3, present in all fish. Cod is highly beneficial for health.

One of the recipes you can prepare with is it is the Cod a la Llauna, typical of the Barcelona cuisine, with other flagship preparations in the area of Catalonia where it?s made with roasted peppers and pine nuts or raisins.

Its name comes from the container where it was originally cooked, a kind of can. But currently, it is prepared in clay plate by many people without diminishing the final result quality and is consumed throughout the year as a starter.

Ingredients:

  • 1 Kilo of desalted cod
  • 20 grams of paprika
  • 1 glass of white wine from Penedes, to continue the tradition, of your choice
  • 4 cloves of garlic
  • Flour
  • Salt
  • Olive oil
  • Parsley

Preparation:

Step 1:

Proceed to dry the pieces of desalted cod, then flour it carefully.

Step 2:

Place a pan with enough olive oil to cover the cod in the high heat of the kitchen, as this is hot, proceeds to fry your cod and reserving the oil remaining at the end of this step.

Step 3:

Then prepare a tray to place your cod, place them in this and reserve.

Step 4:

In the reserved cod oil, fry 2 garlic cloves, previously cut into thin slabs and paprika.

Step 5:

Add a reasonable amount of wine to prevent the paprika from burning and let this boil for a few minutes.

Step 6:

With the obtained mixture proceeds to cover the cod you placed before in the tray, and cover with the ends of very fine chopped parsley and remaining garlic into thin slabs.

Step 7:

Now you are ready to go into the oven for a few minutes at the top of the grill.
