Marsala wine

 TAGS:Marsala wine is produced in Sicily, Italy, in a region that has the same name and received a protected designation of origin in 1969. Marsala wine is similar to port; it was initially fortified to withstand sea travels and then gained in popularity.

Marsala wine is produced under the process ?In Perpetuum?, very similar to the one used to make sherry. This process is to raise the level of alcohol while preserving the characteristics during long sea voyages. It is made from white grapes Grillo, Inzolia and Catarratto types, among others.

The Marsala wine was served as an appetizer between the first and second dish, and most recently served as a dessert with Roquefort cheese, Parmesan and other spicy cheeses, fruits or pastries.

Marsala Wine is classified according to its sweetness, color, and aging; levels of sweetness are dry (with maximum 40 grams of sugar per liter) semi (41-100 grams per liter) and sweet (with more than 100 grams per liter)

With regard to aging, it may be Gold, Ambra, Rubino, Fine (aged one year), Superiore (Aged two years), Superiore Riserva (Aged at least 4 years), Vergine or Pavers (Aged at least 5 years), Vergine or screeds or screeds Stravecchio e Vergine Riserva (aged at least 7 years). Marsala wine is also quite used for cooking and making sauces.

The appearance of Marsala wine can vary from golden brown to ruby, to amber, and is popular in Americans Italian restaurants for his versatility and because it allows you to create all kinds of recipes. The aging of Spanish wines

 TAGS:The Spanish wine classification about aging time has been adapted to the 2003 Spanish wine and vineyards law, in order to guarantee a standard quality for the designation of origin. Besides these there are other classifications, about control and characteristics. For example, in order to get the crop year printed on the label,  85% of the wine must have been produced in the same year.

The wines can be classified in the following way:

  • The young wines are those wines of the year, made to be marketed immediately. They don?t age in barrels, or the aging time used for them is smaller than provided for aged wines.
  • Crianza wines: those red wines that are spending two years in age, with at least 6 months in wood (12 months for Rioja), and put on sale in the third year. The rosé and white wines remain one year aging in the cellar and six months in wooden barrels, to be sold in the second year.
  • Reserva Wines: in the case of red wines, it must remain three years in the cellars, at least 12 months must be in oak barrels, for marketing in the fourth year. The rosé and white wines require two years and six months in warehouses in wooden barrels to be sold in the third year.
  • Gran Reserva wines: wines made from the best vintages, in the case of the reds, they have to spend a minimum of two years in wooden barrels, the rosé and white wines spend four years in the cellars, six months in barrels and are sold during the sixth year.

Instead, aging of noble wines or fortified wines should be:

  • Nobles wines: They are aged for a period of 18 months in wooden barrels
  • Añejos wines: They are aged for a period of 24 months in wooden barrels
  • Old wines: They are aged for 36 months in wooden barrels.

All Spanish autonomous communities are producers of wine, but half of the vineyards are in Castilla-La Mancha. This is the largest wine region of the world.

The Chinese vineyards threaten the habitat of the pandas

 TAGS:The spread of the culture of wine (and its industry) may be a good engine of development for areas of the planet that had traditionally based their economy on agriculture, given that the final product has a higher value. This is especially true when the promoters of this adaptation are already experts, sometimes from the most recognized wine regions of the world.

The reverse of the coin is that this transformation of the economic activity of a region can have harmful effects on the environment, especially when it comes to traditional habitats of endangered species.

This is the case that has recently comes to light in the Chinese provinces of Shaanxi and Sichuan, which has announced planting 18,000 hectares of vineyards. These regions of China are the home of a stable population of 1,600 wild giant pandas, who are threatened by this project, according to reports from numerous environmental organizations and voices in the scientific world.

Although pandas usually live in protected reserves, which in principle would not be affected by the project, it is usual that they leave the defined area in search of new territories for feeding and breeding. The project might limit their mobility, being confronted with vineyard areas, plants that are absolutely foreign to these cute animals. The effects on their behavior are unknown, and it might question the viability of the species in these provinces.

In addition, if the grapes are grown on land traditionally used by cattle, this could be driven to invade panda?s reserves, entering into direct competition with them, which could be disastrous.

This is an issue that is worth considering carefully before making any move that could be beneficial for the local economy, but could also lead to an irreparable loss to the country’s natural heritage. In addition to the provinces listed, in the Liangshan prefecture, Aba and Ganzi, the issue is the same. It highlights the government’s economic priorities, which often clash with the conservation of nature, an always precarious balance.

Cava : the memory keeper

 TAGS:In recent years, multiple studies have shown the benefits of food and wine on the health of people, if consumed with moderation. The presence of certain chemical compounds in the alcohol, associated with a balanced diet (which should be close to the Mediterranean diet) and regular and light exercise, demonstrate, therefore, to be a good way to prevent diseases of all kinds, especially those related to cardiovascular problems, certain cancers, high cholesterol or arthritis.

But what had not been tested so far were the advantages of drinks like cava with the memory. Thus, an investigation of the University of Reading says that drinking three glasses of this sparkling wine can help to fight the effects of brain disorders such as Alzheimer’s and dementia. The last one, dementia, although usually manifesting in advanced age, probably finds its roots in middle age, from age 40.

According to this study, the presence of phenolic acid in the grape varieties that cava is made of is directly related to these beneficial effects. To do this, there?s been experiments with laboratory animals, and it was found that after regular consumption of sparkling wine (mixed with food), subjects improved their performance to run a maze, going from 50% success to 70% within a period of only six weeks.

Traditionally, it is always said that the grapes are an infallible remedy for memory loss. But we did not know if this statement had any scientific basis. Now we have a hint of something similar, but the final test still has to be done, with a group of over 60 years, for three years. They will be the subject of a study to definitively prove or disprove the preliminary findings of the study, led by biochemistry professor Jeremy Spencer.

 TAGS:The wine of Judas (Sangue di Giuda) is called in this way for its intense ruby red color with purple and bright flashes. It is originated from Italia. The legend says that Judas, after betraying Jesus, returned to his land as a sign of repentance and more specifically to the city of Oltrepo. The locals recognized him and tried to kill him. In order to save himself from this death he solved the vineyards? problems with a miracle. After that the red wine of this region was called Judas or Judas’ Blood.

Its flavor is slightly sweet and slightly sparkling, is produced in the cellars Conte Vistarino in Giordi Rocca district, featuring 826 acres where Croatina, rare grape and Barbera are grown. Its production is special:  fermented twice, in his second alcoholic fermentation it is poured in pressure tanks, producing the bubbles of CO2 that please the consumers. The result is a very fresh and sweet wine like Lambrusco.

This wine is very well appreciated by female consumers who enjoy its sweetness and fruit flavor, also great for pasta, cheeses and white meats. It is available in the Spanish and English market since not long, be sure to try and evaluate its flavor and quality.

Coming Father’s Day

 TAGS:Father’s Day is around the corner and every year we do the same, leaving the choice of the perfect gift for the last time. Luckily there is internet and thanks to it we don’t need to move more than a finger to get home that bottle of wine you want to give to dad (or, even better, to get it directly delivered at his address, why not?).

Probably within a week we will be invited to a dinner with our parents on the occasion of celebrating this day, so let’s be proactive and generous in choosing the gift, because then probably with a little luck, we’ll also enjoy it ourselves ( you just have to have a little nerve).

As perfect gift for Father’s Day I always suggest a bottle of wine. This time, I encourage you to go for Salitre 2009. The reasons are several, and you will certainly agree with me (especially when you taste it). But as I know you like to get some details in advance I would just say that the production is very limited, no more than 1,800 bottles, and the harvest is done manually, after an exhaustive selection of the clusters.

If you prefer to be a little more original and you are looking for a non conventional gift for Father’s Day, you can hit the mark with a bottle of white wine (Yes! Quite original, ain’t it?). Viña Tondonia Blanco Reserva 1998 is a delight for the palate, and I can ensure you that also like red wine drinkers love it so for sure your father will be very happy because this is a very good wine, with the added value of coming from one of the oldest wineries in the Rioja, which still produces all its wines in the traditional manner.

Although, whatever they say, a classic is a classic, and the typical tie looks better if it comes together with a bottle of brandy, am I right or not? My proposal sets aside all those expensive cognacs, we already know that they are there and that they are good, and goes along the lines of an affordable gift, a nice detail that your father will appreciate. How many bottles must I buy?

The wine bottles classic content is 0.75 liters, and the glasses themselves have a standard capacity of 125 milliliter. But those standards can be changed, a good example is the glass of Bordeaux. Spring is here! Long live the wine!

 TAGS:Spring is here! long live the wine! Yes, yes, do not look so surprised and let me explain you what I mean because I am sure you are going to understand it at first and I bet you that you will start feeling exactly the same way I do regarding this season… Once the last weekend of March is over, all I see reminds me of wine (in all its varieties, what I am going to hide it for?).

In spring the weather starts to give us a break and those cold winter temperatures give way to others, warm and delicious, perfect for tasting a chilled rose wine, a claret Designation of Origin Rioja (we do not need to look any further). What I mean is that kind of wine that makes you regret not to have one more bottle cooling in the fridge.

The arrival of warm weather coincides with the appearance of the first flowers, with their delicate aromas that remind me of those central European white wines which combine beautifully with cold starters and seafood dishes.

The flowers are beautiful, we rejoice to life with their colours, but many also cause us the dreaded hay fever of every year. Every spring we have to suffer until the summer starts. We spend more than half the day sneezing while we try to hide our big red nose. And whenever I think of something crimson with an intense and noteworthy nose I remember those wonderful Ribera del Duero red wines, I cannot help it.

In the coming weeks we will only be able to get rid of the symptoms of allergy to pollen when some clouds appear on the horizon and we enjoyed one of those rainy days. The raindrops pattering on the windows, while the temperature drops a few degrees, that smell of wet ground, those puddles … those puddles where drops falling make appear some small bubbles… Do not they look like sparkling wines?

I do not know if it will happen to anyone else or do I have to get it checked, but I am not able to go out at this time of the year without thinking about wine, so if you cannot beat them, join them. Long live the wine! Viva the spring! And to celebrate it let’s get some bottles:
