APPELLATION: Châteauneuf-du-Pape (AOC).
VINEYARD: Pierre Amadieu. It is located in the town of Gigondas, 20 km south of Avignon, France. Its terrain has 137 hectares of vineyards and is surrounded by 200 hectares of oak forests and scrub that provide natural protection. Its altitude varies between 230 and 500 meters above sea level, ideal for the ripening process of the grapes. The soil is composed of sandy loams and large limestone which allows the roots of the vines absorb heat at night the stones are during the day.
GRAPES: Grenache (85%), Syrah (15%).
AGEING: 14 months in French oak barrels new and used. You can store up to 10 years after harvest.
PREPARATION: The harvest is manual and takes place in October. Winemaking is the tradition of this great denomination. Maceration of the fruit is long; It has a minimum duration of three weeks.
PAIRING: beef, lamb, fricassee of mushrooms and other combinations of meat with vegetables.
