Bouvet Ladubay Crémant de Loire Rosé Louis Vernant Chapin Landais (Cabernet Franc)

- Nose: On the nose, this wine is quite complex with dominant redcurrants, blackcurrants, and quince. The fruity aromas are complemented by some hazelnut and vanilla.
- Mouth: This is a fresh, silky, and slightly tannic sparkling wine with amazing flavours of quince, blackcurrants, and vanilla on the palate.

VINEYARD: The producer of this wine is Chapin & Landais in collaboration with Bouvet Ladubay. The grapes come from many local winegrowers that collaborate with Bouvet Ladubay. Chapin & Landais bottle the wine and sell it under their name.
GRAPES: 100% Cabernet Franc
AGEING: Bouvet Ladubay Crémant de Loire Rosé Louis Vernant Chapin Landais was aged during the making process but does not have a set regulation of mandatory bottle ageing.
PREPARATION: After harvest, the grapes are pressed and brought to the winery. Fermentation takes place for the next 8 to 10 days in thermoregulated stainless steel vats, thus allowing control of the optimal temperature (around 20°C). After that the wine is cleared by racking and filtering. Some oxygenation is allowed and adds to the wine's complexity. Ageing of base wine is done in stainless steel tanks and wooden barrels. When it is ready, the wine is blended to create a unique house style cuveé. The wine is bottled with the yeast and liqueur de tirage added, which will immediately start a second fermentation. The bottles are sealed with a temporary crown cap. The bottles are aged from 9 to 24 months after bottling. After riddling and careful disgorgement a small amount of liqueur d'expédition is added.
PAIRING: When paired with shellfish, poultry, lean fish or appetizers the wine shows its true complexity and character but many decide to enjoy it as an aperitif.
