- Winemaking: The varieties were vinified separately. The grapes, in excellent condition, were softly crushed and vinified in the traditional way, for about 8 days, in stainless steel tanks, at controlled temperatures of 28ºC. Depending on the variety, pre- and/or post-maceration took place. Following alcoholic fermentation the wine was taken to stainless steel tanks, where malolactic fermentation took place. It was subsequently matured in new oak barrels (45%), as well as used ones (55%), for a 12-month period. Only French oak of a fine grain from French cooperages was used. During maturation, many tastings took place, in order to monitor the evolution of the different wines. Thereafter, the blend was prepared, and the wine was fined, filtered and bottled.

- Food Pairing: Ideal with fine meats, game and intense cheeses, both soft and cured.
- Store and Serve Advices: As with all Dão reds, this wine has a very long shelf-life, and it is in optimum drinking condition up to 10-15 years. The bottle should be kept horizontally, in a cool and dry place. With a prolonged ageing in the bottle (4/5 years), it is natural that a deposit should develop, and the wine therefore requires decanting in order to be better enjoyed. Once open, it should be served on the same day, even though it will remain in good condition for some time, provided it is well sealed, ideally, under a vacuum. A large glass should be used, so that the wine may breathe and open up. It should be served at between 16ºC-18ºC.”
