Oveja Negra Winemaker's Selection Maule Valley Sauvignon Blanc Carmenere 2018 (Sauvignon Blanc)

TASTING NOTES:

  • View: Straw yellow, green reflections.
  • Nose: sweet aromas of tropical fruit and citrus notes of grapefruit Sauvignon Blanc, Carmenere herbaceous background.
  • Mouth: rich and well-integrated acidity. Soft and richly textured. A dry vibrating end.

APPELLATION: Maule Valley.

VINEYARD: Sauvignon Blanc comes from the blocks of vineyards Campo Lindo and La Esperanza in San Rafael, planted in 2004. Most of the vines are trained on a system of vertical trellis, a small sector is trained in Lyre Trellis providing more shadow, contributing to additional sun protection for clusters. Foliage management is carried out for both varieties, with the aim of creating a shady canopy to protect grapes from direct sunlight. This produces a cooler microclimate for fruit, creating a greater aromatic intensity andgood natural acidity in the final wine. The soils are alluvial clay loam with moderate and texture.

GRAPES: Sauvignon Blanc 90% and 10% Carménère.

AGEING: a large percentage of the mixture aged in oak barrels for three months to promote greater volume and texture on the palate. Wine kept in suspension with its lees for three months.

PREPARATION: grapes harvested by hand in the morning to maintain freshness. Carménère was a complete group press without previous grinding, a crucial to prevent removal of color and produce a cleaning process as it should. The Sauvignon Blanc was crushed before being pressed in a strictly reducing environment to avoid oxidation Each fermented variety separately in stainless steel tanks, for 25 days, cool temperatures of 10 ° to 14 °C, for greater aromatic expression and finesse in the final wine.

PAIRING: seafood, grilled white fish, salads and fresh cheese.
