Bodegas Vivanco Coleccion Parcelas de Garnacha (Garnacha)

- Nose: varietal aromas and very marked minerals, abundant red fruit (currants, raspberries), scrubland, lilacs and balsam.
- Mouth: fresh, sweet, a long and delicate finish.
GRAPES: 100% Garnacha.
AGEING: 18 months in these different coopers barrels without racking. Stay on its lees until bottling, performing Bâtonnage newspapers during the first four months. Wine bottled unfiltered clarify.
METHOD: Handpicked in small crates ten kilograms of capacity. Cooling in cold chamber until the temperature of the grapes reach 3 °C. Double selection of grapes and grains, with a soft stemming and crushing. Vinified separately plots the slope of Zorraquín and El Recuenco. Encube gravity in wooden vats of French oak with no bulges. Cold maceration and fermentation for 19 days with local yeasts. Racking by gravity new French oak barrels sophomores and 500 liters for malolactic fermentation.
PAIRING: piquillo peppers stuffed with meat, stews, casseroles, grilled red meats and goat cheeses.
