Bodegas Vivanco Coleccion Parcelas de Mazuelo (Mazuelo)
- View: purple, high layer, a garnet rim.
- Nose: Intense aromas of ripe black fruit (berries), red (raspberries), understory, fresh herbs, coffee, all surrounded by an earthy and mineral component.
- Mouth: Very fresh, fruity, balsamic, soft tannins and a long finish, powerful, complex and persistent.
AGEING: 14 months in new French oak barrels from different coopers, toast and origins, without decanting, remaining on its lees until bottling and performing periodic Bâtonnage during the first four months. Wine bottled unfiltered clarify
METHOD: Handpicked in small crates ten kilograms of capacity. Cooling in cold chamber until the temperature of the grapes reach 3 °C. Double selection of grapes and grains, with a soft stemming and crushing. Vinified separately plots chestnut and Martinete. Encube gravity in wooden vats of French oak with no bulges. Cold maceration and fermentation for 18 days with local yeasts. Racking by gravity new French oak barrels for malolactic fermentation.
