José Pariente Sauvignon Blanc 2018 (Sauvignon Blanc)

TASTING NOTES:
- View: Straw yellow, green reflections.
- Nose: outstanding aromatic potential, fruit and vegetable notes, cut grass. Intense and complex and a slight mineral touch.
- Mouth: freshness and elegance, structured. Fruity with a lingering finish.

APPELLATION: Rueda.
VINEYARD: some of the first vineyards planted in Sauvignon Blanc Rueda over 28 years. Ground formed by the platform characteristic boulders, very poor in organic matter and limestone outcrops on the highest levels.
GRAPES: Sauvignon Blanc.

AGING maintained its lees far clarification, once clarified, subjected to cold treatment and filtration.
PREPARATION: after stripping, grape maceration for about 10 hours at low temperature. Then embodiment of a pneumatic press. In order to preserve the primary aromas, also alcoholic fermentation at low temperature.

PAIRING: shellfish (mussels, cockles, clams, oysters, etc.) and cooked seafood (shrimp, prawns, shrimps, crabs, crabs), fish of all kinds, fresh cheeses and prosciutto.
TEMPERATURE: 6-8 °C
ALCOHOL CONTENT: 13%
