VINEYARD: Marqués de Cáceres. Vineyards located in the municipalities of Serrated and dry, extend over 100 hectares of crops in which predominates Verdejo grape, and in smaller amounts, Sauvignon Blanc. The climate is continental and soil is stony, stones and sand that provides excellent drainage and aeration to the vine.
GRAPES: mono-varietal Verdejo.
Won: the fermentation takes place in the lees at a controlled temperature between 15 and 17 °C until stabilization and bottling.
PREPARATION: Verdejo is harvested at night to enjoy the cooler temperatures that optimize the quality of the grape. Thus begins a cooling process before selecting the must pressing as smooth as possible.
PAIRING: seafood, pork, meat, vegetables, oriental dishes. It is also excellent as a snack.
