Apostoles Palo Cortado 375ml (Pedro Ximénez and Palomino Fino)
- View: mahogany and amber trim.
- Nose: intense, clean, elegant, subtle and round, citrus, nuts like hazelnuts or walnuts, sun-dried fruits, spices, salt memories, sweet background, memories cigar box and dried leaves of snuff nose.
- Mouth: Intense, expressive, dry, complex and well balanced.
GRAPES: Palomino Fino and Pedro Ximenez.
AGEING: each wine enters a different hearth in American oak barrels for envecer contact with air. After an average of 12 years, the wines are blended, entering the Apostles hearth, where they will continue for 18 years, following the traditional Solera system.
PREPARATION: Palomino Fino grapes gently pressed using a pneumatic winepress without crushing the stem, seeds or skin. Run juice, from the first pressing is the most elegant and delicate wine. Pedro Ximnez pressed grapes separately. After fermentation in stainless steel tanks and classification, Palomino wine fortified to 18% and 15.5% Pedro Ximenez.
