In 1964, Emidio Pepe founded a winery which remains family run to date. He still takes care of all of his vineyards personally to ensure that all goes well from pruning to harvest. His passion was rooted in the indigenous varieties of grape, Trebbiano and Montepulciano d'Abruzzo. He wanted to show the world the true potential of these grapes.
Since the beginning, Emidio Pepe has refused to use chemicals in his vineyards, wanting the soil to stay alive and in peak condition to create high-quality grapes. To this end, no yeast is added during fermentation nor are any enzymes added to encourage the production of aromas. In both the vineyard and the cellar, only copper crystals, mine sulphur, and biodynamic preparations are used to retain the character and personality of the grapes.
For the Emidio Pepe Trebbiano d'Abruzzo 2017, the grapes were picked by hand and crushed using feet in a wooden tub. Each batch of 350 kilograms of grapes was crushed for 40 to 45 minutes to allow the skin and the juice to interact and release all of their flavours and aromas. This delicate crushing allowed the must to be extra-rich when it comes time for fermentation. Spontaneous fermentation took place in concrete tanks for about a month before the wine was bottled. This beautifully acidic and aromatic wine is one that will evolve over time. An elegant, organic wine, it is perfect for pairing with white meat, fish, and cheeses.

Emidio Pepe Trebbiano d'Abruzzo 2017 (Trebbiano and Bombino Bianco)

- Nose: Highlights include flowers such as chamomile, accompanied by fruits like peaches. In the bottom toasted nuts, mushrooms and roots is perceived.
- Mouth: It is a somewhat rustic but elegant taste at the same time, with unparalleled freshness. Vivacious and fruity aftertaste lasting.

AGEING: young wine consumption.
ELABORATION selected are collected and fruits, that are destemmed, macerated and pressed at low temperatures, as a technique to maintain the good odor of natural wort. Proceeds to ferment in stainless steel tanks for at least two weeks at regulated temperature. Finally, it clarified, filtered and bottled.
PAIRING: Mushrooms, pasta, fish, vegetable salads, some light desserts, tropical dishes, chicken, white meat and simple dish.
