El Ciruelo 2017 (Listan Negro and Listán Blanco)
- View: Red raspberry low middle layer.
- Nose: Expressive nose of cherries and spices, balsamic and minty notes, an impressive tour of shades of black pepper, bay leaves, leaf snuff, eucalyptus, juanolas, black tea.
- Mouth: very fresh and subtle, herbal, mineral, with high acidity, flavourful, spicy, soft, light and persistent tannins simultaneously.
APPELLATION: Valle de la Orotava.
VINEYARD: Name: Plum.
GRAPES: 99% black Listán, 1% white Listán. Plot situated between 480 and 520 meters, low system braided cord. Northern Exposure. sandy loam soils.
AGEING: 11 months on its lees in used barrels of 500 liters.
METHOD: Handpicked made in boxes of 16 kilos. Vinification in concrete tanks with 100% whole cluster, without temperature control. indigenous yeasts.
PAIRING: simple dishes, fish.
RECOMMENDED SERVING TEMPERATURE: 16 °C
