The Ripassa is one of the most important wines of our evolution wine making. The manually harvested grapes are destemmed and macerated in stainless steel vats for 10 to 12 days. On completion of the fermentation, the new wine is separated from the skins with soft press and stored in steel tanks until the month of January; era in which the dried grapes are pressed to produce the Amarone.
At this point the Valpolicella is "passed back" on the Amarone pomace with a residence time of 7/8 days at 25ºC - 28ºC temperature. After aging in barrels for 18 months followed by a slight aging in bottle for 6 months, it comes this extremely long wine, soft and velvety, with intense aromas of red berries.
Great companion with game dishes, grilled meats and roasts, meats and cheeses.”
