This Vin de Paille "Straw wine" is made with Savagnin, Chardonnay and Poulsard grapes, hanged and dried for three months in airy and dry rooms. Slightly "passerillees" the grapes are usually pressed in the early months of the new year and matured for three years in oak casks (topped up this time!). Once again, Rolet's Vin de Paille rate amongst the very best in the Jura, it is sweet, round and delicious with a lively, refreshing, tangy, Tokaji-like balance brought in by the Savagnin natural acidity. Excellent with foie gras and desserts.
